Grading System Of Korean Beef

The Hanwoo (한우), is a breed of small cattle indigenous to Korea. This breed is raised mainly for meat and is the source of Hanwoo beef, one of the most rare and expensive meats in the world.

Depending on the degree of marbling, meat color, fat color, firmness of rib eye and maturity, Hanwoo beef is classified by 5 grades: 3, 2, 1, 1+, 1++. 1++ Hanwoo is at the top of the pecking order.
