Barramundi or Asian sea bass is native in the Indo-West Pacific region, prized for its sweet, buttery flavor. It has a firm, moist texture and large flakes.
With half the calories of salmon, barramundi is still packed with Omega-3 fatty acids, also a good source of protein and contains nutrients like vitamin D and potassium.
Heat oven to 180°C. Arrange the barramundi fillets in a single layer in a medium baking dish, add some cherry tomatoes and mixed olives.
Mix melted butter, garlic, salt and pepper together in a medium mixing bowl, then pour sauce over the barramundi.
Spoon the sauce over top of the fish a few times to make sure that it is coated evenly.
Bake at 180°C for 15-18 minutes until the fish is bright white, opaque, and easily flakes with a fork.
Serve fish immediately with a drizzle of sauce from the pan and fresh lemon wedges or juice.
